Christmas fruit cake

Our quick and easy take on a traditional Christmas classic. It produces a perfectly moist fruit cake every time. If you want to have a little fun try swapping the white mud cake mix for a dark chocolate mud cake mix.

Ingredients

  • 1x white mud cake mix

  • 300ml boiling water

  • 125g butter

  • 500g dried fruit

  • 1/3 cup brandy

  • 2 tsp mixed spice

  • 1 tsp dried ginger

Method

  1. Combine 500g of dried fruit mixed with 1/3 cup of brandy in a bowl.

  2. Cover with cling wrap and allow to soak overnight. Tip: chop fruit to allow the cake to cut easily.

  3. Preheat oven to 160 degrees. Line an 8" cake tin.

  4. Combine 125g of melted butter with 300ml of boiling water.

  5. Add your white mud cake mix, spice & ginger whisk to combine.

  6. Add your soaked fruit and stir. Pour into your cake tin and bake for 60 mins.

  7. Allow to cool and refrigerate for 2 hours in the tin before you remove it.

  8. Serve with your favourite buttercream.

Note- this recipe has 50ml less water than the packet directions.
