Upside Down Strawberry Cake
Ingredients
1 X strawberry mud cake mix (mixed as per directions)
250g Strawberries
2 tbsp corn flour
2 tbsp sugar
Directions
Preheat oven to 160 degrees
Mix strawberry mud cake as per instructions.
Wash and halve strawberries.
Combine cornflour and sugar in a small bowl.
Toss strawberries in the cornflour mixture to coat and arrange them in the bottom of your lined cake tin.
Pour the cake batter over the strawberries.
Cover with a piece of foil and bake for 60 mins remove foil and bake for a further 30 mins. The cake is ready when your knife comes out clean.
Allow to cool and refrigerate overnight.
Remove from tin and serve with a generous amount of fresh cream.
Tip - covering with foil helps your cake to bake flat.
